HomeGrown Green Chile Meatloaf

Those of you that came to the HomeGrown event at the New Mexico Farm & Ranch Heritage Museum may have gotten a chance to try some Green Chile Meatloaf that the New Mexico Department of Agriculture marketing specialists cooked up. It was made with several products that vendors brought to the HomeGrown event. We had many, many requests for the recipe for the meatloaf so we must have been doing something right! For those of you that asked for it, here it is:

New Mexico Green Chile Meatloaf

  • 2lbs beef
  • 1 large onion, chopped
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 8 oz of green chile salsa
  • BBQ sauce to taste
  1. Preheat oven to 400⁰. In a large bowl, combine the beef, onion, eggs, breadcrumbs and salsa. Blend all ingredients thoroughly so everything is well distributed throughout the beef.
  2. Shape into loaves in your preferred size pan and place in preheated oven.
  3. Cook at 400⁰ for 20 minutes. Remove from oven and top with BBQ sauce. Return to oven and cook for another 20 minutes at 350⁰ or until the internal meat has reached 165⁰. Allow to rest a few minutes before serving. Serve with extra BBQ sauce to taste.
